Homemade Peanut Butter
Ingredients
2 cups dry roasted peanuts
¼ teaspoon salt
1 teaspoon vanilla
1 tablespoon water
1 tablespoon olive oil
Directions
To roast raw peanuts, place peanuts on a wide skillet in a single layer. Use medium heat and roast the peanuts for 6-10 minutes, stirring occasionally until fragrant and a few nuts start to pop on the stove. Cool peanuts prior to using.
In a food processor, add the dry roasted peanuts and process until smooth. Depending on the machine, this can take between 5 to 10 minutes. Once smooth, add vanilla, water, and olive oil blend for another 5 minutes until smooth.
To make a chunky peanut butter add another tablespoon of oil to process into a thinner peanut butter. Remove the peanut butter into a bowl and stir in ½ cup chopped roasted peanuts.
To make chocolate peanut butter, add another tablespoon of oil and add 1/2 cup chopped dark chocolate into the processor and blend for another 5 minutes until smooth.
