Red Leaf Lettuce Salad with Apples
Ingredients
1 large shallot
1 teaspoon salt
5 tablespoons apple cider vinegar
4 tablespoon neutral oil, canola or vegetable
4 teaspoon sesame oil
4 teaspoon honey
2 teaspoon korean red pepper flakes*
1 pound red leaf lettuce
1 large apple
Salt to taste
*substitute with crush red pepper flake
Directions
Peel, trim and slice shallots into thin rings. Place in a medium bowl, add salt and toss. Allow shallots to marinate for 2 minutes. Add apple cider vinegar, neutral oil, sesame oil, honey pepper flakes and stir with shallots. Set aside.
Slice the apples into bite size pieces, place in a large bowl. Wash and spin dry the lettuce. Slice lettuce into bite sized pieces and add to the apples. Add half the dressing and mix until the salad is well coated. Taste the salad, add more dressing and or salt desired.

Lettuce is mostly made of water, only about 5 % of its weight is the fiber and structure of the vegetable. Different common lettuces ranked by most water content to the least is iceberg, red leaf, green leaf and romaine lettuce.
Red leaf lettuce has slightly more minerals and slightly less vitamins compared to the green leaf lettuce. The major difference between the two is the anthocyanins found in the red leaf lettuce that give red leaf lettuce its color. Anthocyanins may help improve blood pressure, blood sugar and blood lipid levels.
