Mexican Street Corn Salad
Ingredients
3 tbsp butter
½ cup finely chopped onion
3 cloves garlic finely chopped
6 cups corn kernels, frozen or freshly cut
1 cup of water
½ cup cotija cheese
½ cup sour cream or yogurt
½ cup Mayonnaise
Salt to taste
¼ cup chopped cilantro (optional)
¼ teaspoon chili powder (optional)
1 lime cut into wedges (optional)
Directions
In a large saute pan, over medium heat, melt the butter until bubbling. Add onion and cook for 1 minute, then add garlic and cook for another 2 minutes.
Add the corn kernels and cook for 5 minutes over medium heat. Add the water and let simmer for 5 minutes.
Place cooked corn mixture into a large bowl and mix with cotija cheese, sour cream, mayonnaise and season with salt to taste. Add cilantro, chili powder and lime juice if desired.
Quick Tips
When you choose corn with husk, the easiest way to check if it is a good quality is to peel open the husk on the top and check the tip of the corn. If there is no mold or rot, the corn is fresh. If the kernels on the tip are big, then the rest of the corn kernels below will be very plump and sweet.
