Green Olive Tapenade

Ingredients

1 can pitted green olives (6 ounces dry weight)
¼ cup chopped parsley 
¼ cup chopped scallions 
2 tablespoons olive oil 
1 tablespoon lemon juice
¼ teaspoon black pepper
salt to taste 
toasted sliced bread to serve 

Directions
  1. Using a food processor, chop the olives until fine. Add parsley scallions, olive oil, lemon juice, black pepper and process until smooth. Taste and adjust salt as needed. 

  2. If you do not have a food processor, mince the olives finely with a knife. Combine chopped olives, parsley and scallions in a large bowl. Using a fork and mash the olives with the herbs. Stir in the remaining ingredients. 


Quick Tips
  • Olives are a good source of vitamin E, copper and healthy fats that are good for heart health. 

  • Any kind of pitted olive can be used for this recipe. The flavor will be vastly different between different olives. Some olives can taste buttery, bitter and or very salty.
