Greek Lettuce Salad

Ingredients

1 head of green leaf lettuce
3 stalks scallions
¼ bunch dill
¼ bunch mint
½ cup crumbled feta cheese
1 teaspoon dried oregano
¼ tsp salt
3 tablespoons extra virgin olive oil
1.5 tablespoons lemon juice
Zest of 1 lemon (optional) 
Salt to taste 

Directions
  1. Wash and spin dry green leaf lettuce and slice into thin strips. Measure 6 cups of sliced lettuce and place in a large bowl. 

  2. Wash, trim green onions and slice into thin rounds. Wash pick mint leaves and dill fronds. Measure each into a ¼ cup, packed. Reserve remaining herbs for garnish. Slice mint into thin ribbons. Lightly mince the dill. Place scallions, mint and dill into the bowl with lettuce.

  3. In a medium mixing bowl, add the oregano, salt, olive oil, lemon juice and lemon zest. Whisk vigorously until combined. Add dressing to the vegetables and toss to combine. Add salt to taste as desired. Sprinkle the feta cheese on top, extra herbs and serve. 


Quick Tips
  • Green leaf lettuce is a good source of vitamin C, copper and potassium. 

  • Cooked chicken breast, tofu and boiled eggs make a great addition to this salad.
