Creamed Spinach with Toast

Ingredients

½ pound of spinach leaves
⅓ cup heavy cream
1 clove garlic, finely minced
2 teaspoons butter
¼ teaspoon salt 
¼ teaspoon ground white pepper 
⅛ teaspoon nutmeg
2-3 pieces of toasted bread

Directions
  1. In a small saucepan over high heat, boil 3 inches of water. Add spinach leaves and cook for 2 minutes. Drain spinach and set aside to cool.

  2. Return the empty pot to the stove and set on medium heat. Add heavy cream and garlic and cook until the cream begins to form bubbles, about 3 minutes. Turn off the heat and set aside. 

  3. Squeeze the excess water from the cooked spinach and cut into small pieces. In a skillet over medium heat, melt the butter until bubbling. Add the spinach and cook until most of the liquid has evaporated. Stir in the cooked heavy cream, salt, and white pepper and simmer for 2 minutes. Taste and adjust salt if necessary. Set the toasts on plates and pile the spinach on top.

  • Spinach is found to improve eye health, decrease inflammation and fight infections. 

  • Spinach has many vitamins and minerals including Vitamin A, C, K, B9, iron and calcium. 

  • Spinach can be eaten raw or cooked. Some vitamins are higher in content in raw spinach while some minerals are more easily absorbed in the cooked version.
