Polish Cottage Cheese Spread (Gzik)
Ingredients
1 bunch radish with fresh green tops
½ teaspoon salt
2 stalks scallions
1½ cups low fat cottage cheese
¼ cup greek yogurt
¼ teaspoon black pepper
Salt to taste
Directions
Cut off radish greens ½ inch above the root. Place in a large bowl and wash until the water runs clean. Cut off the radish roots ½ inch below the top where the greens are. Place in a large bowl and rinse. Place both greens and roots in a colander to drain.
Finely chop all radish greens and half of the radish roots. Place in a bowl and toss with ½ teaspoon salt, set aside for 10 minutes.
Slice scallions finely and set aside.
Drain radish mixture and lightly squeeze out excess liquid and place in a mixing bowl. Once all the radish is purged of extra liquid, add scallions, cottage cheese, yogurt and black pepper. Mix well and season with salt if needed. Serve bread with bread or crackers.
Quick Tips
If you are unable to find radishes with fresh greens, double the amount of chopped radish used.
Radishes are a good source of Vitamin C, magnesium and potassium.
Radish tops can also be used in sauteed vegetable recipes.
